Brand Manager - Sushi Category
 Cape Town or Johannesburg

 A leading national hospitality brand is seeking an experienced and creative Brand Manager to take full ownership of its sushi category. This newly created position is ideal for a commercially-minded food professional with a passion for culinary innovation and deep knowledge of sushi trends, ingredients, and sourcing. 
 The role offers a hybrid working model, but requires a strong on-site presence and close collaboration with cross-functional teams across the business. 
Minimum Requirements: 
 Degree or diploma in Culinary Arts, Food Science, Business, or a related field 
 3-5 years' experience in category or product management within food service or hospitality 
 Practical knowledge of sushi production, ingredients, and sourcing 
 Strong commercial and financial acumen 
 In-depth understanding of consumer trends and food innovation 
Key Responsibilities: 
 Develop and implement a clear category strategy aligned with the brand's broader vision and customer expectations 
 Define product ranges, quality standards, and innovation roadmaps for the sushi category 
 Collaborate with chefs, suppliers, and internal development teams to improve and innovate the sushi offering 
 Monitor performance metrics such as sales, margins, product mix, and waste to optimise the category 
 Ensure compliance with food safety regulations and internal standards 
 Partner with operations, training, marketing, and procurement teams to ensure successful product launches 
 Conduct market and competitor research to maintain the brand's leadership in sushi innovation
