The Bar & Beverage Manager is responsible for overseeing the full beverage operation of the Ocular Lounge and Events Space at Zeitz MOCAA. This includes managing all bar services, staff, stock, and beverage offerings to ensure a seamless, high-quality guest experience. The role requires a strong combination of operational management, staff leadership, stock control, menu development, and client service excellence.
Key Responsibilities
Bar Operations & Service
Oversee the day-to-day running of all bar operations during day-time bistro, events and activations.
Ensure bars are fully set up, adequately stocked, and service-ready ahead of each event.
Maintain service excellence standards aligned with the Zeitz MOCAA Ocular brand.
Team Management
Recruit, train, schedule, and supervise barmen and bar support staff.
Motivate and lead the team to deliver professional, guest-focused service.
Implement training on new cocktails, wines, or seasonal offerings.
Stock & Inventory Control
Manage ordering, receiving, and storage of all beverage stock.
Monitor par levels, conduct regular stock counts, and manage variances.
Implement cost control measures to minimise wastage and maximise profitability.
Menu Development
Update and innovate bar menus in line with seasonal availability, trends, and client preferences.
Collaborate with chefs and event managers to pair beverage offerings with menus.
Ensure compliance with licensing laws and responsible service of alcohol.
Client & Event Collaboration
Work with the Sales and Project Management team to design bespoke beverage offerings for events.
Oversee bar setups for private functions, corporate events, and large-scale activations.
Administration & Compliance
Prepare post-event reports on bar performance, stock movement, and profitability.
Ensure all health, safety, and liquor licensing regulations are adhered to.
Manage supplier relationships and negotiate pricing where possible.
Skills & Attributes:
Strong leadership and people management skills.
Excellent knowledge of mixology, wines, craft spirits, and beverage trends.
Strong organisational and stock management abilities.
Ability to work under pressure in a fast-paced, high-end events environment.
Excellent communication and client service orientation.
Requirements
Minimum 3-5 years' experience managing bar operations in a high-end venue, hotel, or events space.
Diploma in Hospitality Management or relevant qualification (preferred).
Valid driver's licence and reliable transport.
Willingness to work evenings, weekends, and extended hours for events.

Pay: R18000,00 - R23000,00 per month
