Job Summary Gr.12; Comp.Lit; 4 yrs exp production meat plant/chair daily meetings day's prod./discipline/SHE/issues/ops checks/prod. plan/start-up times. Check bovine/ovine/local/export labels carcasses/quartering/storage boxed offal in freezers/ wholesale transfer/temp carcasses/feeding speed quarters to debone/carcasses to wholesale/FIFO in chillers & freezers. Humane handling animals/start 7:00/stunning/ bleeding/speed/electrical stimulation/slaughter SOP/35 carcasses/hour/cuts/holes minimised/2 knife system/cleaning/scales checks. Offal cut/pack to specs/speed kept/ cleaning/QC/recons offal/by-products/boxed products labled /chillers cleaned daily/freezers weekly/sanitise prod. equip. daily/all FS checks/Prod. Cntl sheets done/daily stock counts for product/pack. balance/daily report Snr Mngt/monthly/YE stock counts/produced stock/lock-down SOP done daily/all chillers/freezers switched on. Ensure FS/QC/CAR/SHE checks done/submitted/FS audits implemented/investigate NCR/complaints/RCA/CAR/PAR/ staff & plant audit ready/attend FS meetings/ensure training staff on FS SOP/housekeeping/Production/Canteen/ Locker Rooms/Ablution/pest cntl audits done. Discipline/training matrix upheld/staff uphold standards of GMP/FS/Meat Safety/HACCP/each job/machine has Job Spec/WI/ SOP/ assessed/ staff grading done frequently/conduct monthly Dept. meetings/KPIs for Supervisors.
